I asked locals and expat friends in advance about their favorite spots and went to check them all myself. In a week, I became a khinkali sommelier and put on a couple of extra kilos. By the way, China is considered the birthplace of this dish: the recipe traveled through nomads to Central Asia and Siberia, and later became in Russian &#8220;pelmeni&#8221;.<\/p>\n<p>In Georgia, dough and meat make <strong>khinkali &#8211;<\/strong> <strong>a\u00a0big dumpling<\/strong>. The dish comes from the mountainous regions \u2013 Mtiuleti, Pshavi, Khevsureti. The classic filling is raw meat, so that cooking it creates a rich broth inside.<\/p>\n<p>Besides meat, there are khinkali with cheese, potatoes, or mushrooms. For the more adventurous \u2013 with spinach. None of these appeal to me; I only eat the meat ones. Lamb khinkali are less tasty, as the broth from that meat isn\u2019t great. But that\u2019s just my taste.<\/p>\n<p>There are two types of meat filling: mtiuluri (mountain) and kalakuri (city):<\/p>\n<ul>\n<li>\n<p><strong>Mtiuluri<\/strong> \u2013 as simple as it gets: meat (traditionally a mix of beef\/pork or lamb), onion, salt, pepper, a bit of cumin, no herbs.<\/p>\n<\/li>\n<li>\n<p><strong>Kalakuri<\/strong> \u2013 the \u201ccity\u201d version: meat plus herbs (usually cilantro\/parsley) and often garlic.<\/p>\n<\/li>\n<\/ul>\n<p>All restaurants serve kalakuri. It\u2019s way tastier, juicier, more appetizing. Mtiuluri is very rare; you have to go out of your way to find a place serving it.<\/p>\n<p><strong>A little myth.<\/strong> People often say \u201cproper\u201d khinkali must have exactly 19 folds. In reality, the number of folds is just a matter of tradition and the maker\u2019s style \u2013 there\u2019s no strict rule.<\/p>\n<p><strong>One khinkali is a khinkali<\/strong><\/p>\n<p>In Georgian, <em>khinkali<\/em> is singular, and the plural is <em>khinklebi<\/em>. You don\u2019t need to memorize this; just say khinkali all the time. \u201cI ate a khinkali,\u201d \u201cI have 10 khinkali,\u201d \u201cone khinkali won\u2019t fill you up.\u201d<\/p>    <\/div>\n<\/div>\n<!-- \/module text -->        <\/div>\n                        <\/div>\n        <\/div>\n                        <div  data-lazy=\"1\" class=\"module_row themify_builder_row tb_2f7w46 tf_w\">\n                        <div class=\"row_inner col_align_top tb_col_count_1 tf_box tf_rel\">\n                        <div  data-lazy=\"1\" class=\"module_column tb-column col-full tb_ihpg46 first\">\n                    <!-- module text -->\n<div  class=\"module module-text tb_c1dw46   \" data-lazy=\"1\">\n        <div  class=\"tb_text_wrap\">\n        <h2>How to Eat Khinkali<\/h2>\n<p>Remember the main rule: eating khinkali with a knife and fork is like breaking spaghetti in Italy or cutting pasta with a knife. Depending on the place, they might either scold you or call the police. <strong>Khinkali are eaten with your hands.<\/strong> If they bring sauce \u2013 that\u2019s for tourists. Locals just sprinkle them with pepper.<\/p>\n<p>Also: one khinkali is like three dumplings. So, 3\u20134 per person, and you\u2019ll still have room for maybe half of another hot dish. In Georgia we are not eating, we taste everything!<\/p>\n<ul>\n<li>\n<p>Grab the khinkali by the \u201ctail.\u201d A hot khinkali slips from your hand, flops onto the plate, tears, broth splashing everywhere.<\/p>\n<\/li>\n<li>\n<p>Blow on your burned fingers, dry them off.<\/p>\n<\/li>\n<li>\n<p>Eat whatever fell however you can. The key is to embarrass yourself quietly and quickly before the khinkali police arrive.<\/p>\n<\/li>\n<li>\n<p>Tear off a piece of napkin and wrap it around the \u201ctail.\u201d<\/p>\n<\/li>\n<li>\n<p>Slowly lift the khinkali, holding the pouch with your other hand.<\/p>\n<\/li>\n<li>\n<p>Carefully bite a little off the side of the pouch.<\/p>\n<\/li>\n<li>\n<p>Tilt the pouch toward yourself, slurp the broth. Repeat steps 3\u20136 until you manage to drink the broth.<\/p>\n<\/li>\n<li>\n<p>Eat the filling and the dough in any order.<\/p>\n<\/li>\n<li>\n<p>Don\u2019t eat the tail. Often it\u2019s not fully cooked. Naturally, no burgers or sushi. This isn\u2019t a ranking from best to good \u2013 just a list. All links &#8211; to Google Maps.<\/p>\n<ul>\n<li>\n<p><a href=\"https:\/\/maps.app.goo.gl\/FrULkfV8EERL5ZML6\" target=\"_blank\" rel=\"noopener\"><strong>Velyaminov<\/strong> <\/a>\u2013 one of the oldest khinkali spots. They say it\u2019s been around for over 160 years. A semi-basement with no fancy decor, but low prices, large portions, and good food. As they say \u2013 an authentic place. Many years ago, this restaurant was where I first got acquainted with Georgian cuisine.<\/p>\n<\/li>\n<li>\n<p><a href=\"https:\/\/maps.app.goo.gl\/Vue62oNbs1Tyojuj9\" target=\"_blank\" rel=\"noopener\"><strong>Passanauri<\/strong><\/a> \u2013 a chain; you can search the name on Google Maps and pick the closest one. I linked the one near the Metekhi Bridge and the sulfur baths.<\/p>\n<\/li>\n<li>\n<p><a href=\"https:\/\/maps.app.goo.gl\/ranCp533nfNrm7MLA\" target=\"_blank\" rel=\"noopener\"><strong>Pictogram<\/strong> <\/a>\u2013 here you can actually try mtiuluri.<\/p>\n<\/li>\n<li>\n<p><a href=\"https:\/\/maps.app.goo.gl\/2mpdfnkJKBrBt6aN6\" target=\"_blank\" rel=\"noopener\"><strong>Zodiac<\/strong> <\/a>\u2013 good regular khinkali and fried ones. The menu isn\u2019t just khinkali, plus they have a wide selection of beer.<\/p>\n<\/li>\n<li>\n<p><a href=\"https:\/\/maps.app.goo.gl\/e5sMPCSCCA6rQcno7\" target=\"_blank\" rel=\"noopener\"><strong>Georgian House<\/strong><\/a> \u2013 fancy halls (the interior isn\u2019t my style), a balcony, a courtyard, live music and dancing in the evenings, great
